Strawberry-Rhubarb Pie

Strawberry-Rhubarb Pie
An early summer standard with a touch of vodka in the crust. Strawberries, rhubarb, vanilla bean seeds, brown sugar combine for a tart and juicy summer pie.

I substitute arrowroot for cornstarch for a translucent quality to the thickened juice.

Savor the sweet and tart pie as you read about Superpowers in this weeks Sunday Read by David Amerland and ponder which choices you would make if you had just one superpower.

  1. Wow! A touch of vodka in the crust. That's intriguing. BTW- Doug would like a slice of pie that leaves out the strawberry and is just the rhubarb. That's his personal favorite pie.

  5. David Amerland After partying with Ukrainians once, I limit my vodka intake, but a touch in crust or a lot in limoncello are irresistible. :)

  6. Yeah, I've heard that, Zara Altair. Sour is one of Doug's favorite tastes. His family grew rhubarb in their garden and one of his favorite childhood treats was to pull some out of the ground and walk around with a dixie cup of white sugar and walking around the yard with it dipping in the rhubarb.
